Husband's Beer Braised Short Rib Recipe



After having many kinds of short ribs in my lifetime, me and the husband have always wanted to take a crack at making our own.  This recipe is simple and delicious!  Way to go hubby!

Ingredients:
(Serves 2-3)

2 Pounds of Beef Short Ribs
1 Onion (sliced)
2 Cloves of Garlic (Minced)
1 Cup of Sliced Mushrooms
2 Cups of Beef Stock
2 Bottles of Stout Beer (we used Guinness)
1 Tablespoon of Butter
2 Tablespoons of Extra Virgin Olive Oil
2 Tablespoons of Flour
Salt and Pepper to taste



1.) Season the short ribs with a good helping of salt and pepper.  Then dredge the ribs with flour.


2.) Add the olive oil and butter to a large dutch oven or deep skillet and turn stove top to medium high heat.  Cook the ribs till brown on each side.  Remove the ribs from the skillet.


3.) Add the sliced onions, mushrooms, and garlic to the skillet and cook until soften.

4.) Place the ribs, cooked onion, mushrooms, and garlic in a deep casserole or large baking pan.  Pour the beef stock and beer over the ribs.  Cover with aluminum foil and bake at 350 degrees for 2 1/2 hours.

Beef, It's What's For Dinner...Hubby's Standing Rib Roast Recipe

So even though me and Mr. Domesticated Diva are on a health kick (where all we eat and make are salads, chicken, and fish), we like to splurge every now and then and have something fattening and delicious.  Hence, why we love this rib roast recipe so much.


The ingredients are simple:

Serves: 4-5
-Ribeye Roast aka Rib Roast aka Standing Rib Roast (4-5 lbs)
-2 1/2 tsp. Salt
-1 1/2 tsp. Pepper
-1 1/2 tsp. Garlic Powder
-1 tsp. Cayenne Pepper
-Disposable Roasting Pan (easy clean up!)
-Roasting Rack

Let the rib roast stand at room temp for about 30 min.

1.) While the rib roast is standing at room temp, mix all the dry ingredients together in a small bowl. 

2.) Preheat the oven to 375 F.  Place the roasting rack in the roasting pan.

3.) When the roast has sat for 30 min, massage the season mixture throughout the meat.  Make sure you rub the meat nice and good!



4.) Roast for one hour in the preheated oven.  After one hour of cooking, turn the oven off and leave the roast inside.  DO NOT...I REPEAT...DO NOT OPEN THE OVEN TO LOOK AT THE RIB ROAST, SMELL THE RIB ROAST, ADMIRE THE RIB ROAST, ETC!!! 


5.) Leave the rib roast in the oven for 3 hours (for a 4 lb roast) and 3 hrs. 45 min. (for a 5 lb roast). 

6.) After the roast has sat in the oven for several hours, turn the oven back on to 375 F for 30-40 min.  This will make for a prefectly medium rare cooked rib roast.

7.) Remove from the oven and let the roast sit for 5-10 min before carving.

Here's the final product...



Easy, peasy right!

Price Breakdown:

This roast ended up being almost $12/lbs. Yikes!  But, you can get rib roast from Randalls at $5.99/lb when it's on sale, and it is on sale pretty often (check the sale ads!)

So really this meal would end up costing $24-$30 for 4 servings!
